Ingredients -
¾ cup hot or mild salsa
½ cup mayonnaise
4 (10 inch) flour tortillas
1 ½ cups grated cheddar/Monterey jack cheese
1 tablespoon oil
2 cups mesquite smoked chicken (cut in strips)
1 ½ teaspoons hot sauce
2 cups finely chopped iceberg or Romaine lettuce
1 cup chopped tomato
1 cup chopped onion
salt, to taste
black olives
green chilies
Preparation:
In a small bowl, mix the salsa and mayo; set aside.
Preheat oven to 350; arrange tortillas on two baking sheets; sprinkle with cheese; bake for five minutes or until the cheese melts.
Warm oil in large skillet on medium-high; add chicken, hot sauce and salt. Cook until chicken is completely done.
Place tortillas on counter, top with lettuce, chicken, tomatoes, onion, black olives and chilies; roll up, cut in half and serve with the mayo-salsa dip.
