Easy Chinese Lemon Chicken

Many people love Chinese lemon chicken but they find that many recipes are too much work for one meal. It doesn’t have to be that way! The simplicity of this recipe lays in the fact that the ingredient list isn’t a mile long and you most likely have all of them in your home. Using basic ingredients like lemon juice, garlic and chicken broth; you can create a meal that is sure to rival that of any Chines take-out restaurant.

There are ways to change the recipe up a little without changing the basic flavor of it. Instead of using regular chicken broth try low sodium chicken broth as a healthy option. Also try adding a few different herbs such as rosemary or thyme for a more classic taste. For a thicker sauce, mix cornstarch into the chicken broth until it’s dissolved. Continue with the preparation instructions for the sauce.

The sauce in this recipe is not a thick one. For a thicker sauce, mix 2 tablespoons of cornstarch into the chicken broth before heating it up. Use a fork to ensure that the entire cornstarch is dissolved. Cook the liquid ingredients until the sauce is a thick as you would like it to be.
There are many ways to make this recipe work if you don’t have all of the ingredients on hand.

Chicken thighs or legs are good to use with this recipe as well. They have a tendency to retain juices and flavor because of their natural fattiness. Substituting the chicken parts is definitely an option. To make your own chicken broth, mix ½ tablespoon of chicken bouillon powder into ½ cup of boiled water.

Easy Chinese Lemon Chicken Ingredients:

  • 4 skinless chicken breast halves, bone out
  • 4 teaspoons all-purpose flour
  • Salt and pepper
  • 2 teaspoons vegetable oil
  • ½ cup chicken broth
  • 1 teaspoon garlic, minced
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon butter


Preparation:

Use a mallet to flatten the chicken breasts to thickness. Evenly coat the chicken breasts with the flour and season the chicken breast to taste with salt and pepper.

Deep fry the chicken breasts in hot oil for approximately 5 minutes on each side until they are golden brown in color. If there is still pink in the thickest part of the chicken breast; cook for an additional 5 minutes on both sides or until cooked all the way through.

Remove the chicken from the oil immediately once it’s cooked. Drain the excess oil from the chicken breasts by placing the chicken on paper towels that have been placed inside a colander.
Pour the chicken broth, garlic, lemon juice and butter to a saucepan.

Cook the ingredients for about 2 minutes or until heated through and pour over chicken.
