Incredibly Simple Betty Crocker Lemon Chicken

Betty Crocker Lemon Chicken Ingredients:

  • 8 skinless, boneless chicken breast halves
  • 1 teaspoon lemon pepper
  • ¼  teaspoon salt
  • 1 teaspoon vegetable oil
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon peel
  • ¼ cup chopped toasted pistachio nuts
  • Lemon slices


Preparation:

Flatten the chicken breasts between wax paper to ¼” thickness using a mallet. Using chicken thighs or legs is an option as well.  In a bowl, combine lemon juice and lemon peel; set the bowl aside for later. Season the chicken breasts on both sides, evenly with lemon pepper seasoning and salt.


In a large sized skillet, heat the vegetable oil over medium high heat until it reaches 350 degrees F. Fry the chicken breasts the heated vegetable oil, flipping the chicken pieces over once while frying and stirring.


Cook until the chicken juices that are running out are clear. This should take approximately 15 to 20 minutes. Be sure that there is no pink remaining in the thickest part of the chicken. If the chicken is still not fully cooked you will want to continue heating it until the center is no longer pink.


This Betty Crocker Lemon Chicken should be served with the juice mixture, sprinkled with pistachio nuts and garnished with slices of lemon. The nuts are optional and can be substituted with green onions or other herbs.
