Chow mein is a stir fried dish containing meat and Chinese vegetables in a brown, soy sauce-based sauce. This might sound really simple and basic and it is, because chow mein originates from Chinese peasant cooking. Traditional Chinese recipes are really healthy. They don't use much sugar, dairy produce or fats and brown rice and vegetables are really popular. The authentic chow main recipe has become somewhat westernized however, to please the western palate.
Chow mein noodles are distinctively crispy. For a more authentic chicken chow mein recipe you can throw in a little fish sauce or oyster sauce. Remember that a little of these sauces does go a long way so just add a few drops and taste. Even if you just add a couple of drops you will be able to taste the sauce. Fish sauce is very salty so you won't need to add any extra salt to the recipe if you are using it.

Ingredients -
2 boneless chicken breasts
2 minced cloves garlic
5 oz chow mein noodles
3 tablespoons oil
¼ cup sliced bamboo shoots
2 ribs celery
8 sliced mushrooms
1 tablespoon soy sauce
1 chicken bouillon cube
1 tablespoon cornstarch
2 tablespoons dry sherry
Preparation:
Use a potato peeler to shave the celery into strips, and then cut them into smaller pieces.
Preheat the oven to 325 degrees F.
Mix together the soy sauce, bouillon cube, cornstarch and dry sherry to make the chow mein sauce and set it aside.
Swirl the oil around in a hot wok, and then stir fry the garlic for 30 seconds.
Add the chicken and stir fry it for 3 minutes or until it goes white.
Take it out and set it aside.
Stir fry the vegetables for a couple of minutes over a medium heat, and then push them up the sides of the wok.
Warm the chow mein noodles in the oven for 5 minutes.
Add the sauce mixture to the wok, stirring it into the vegetables until everything is bubbling hot.
Add the chicken and warm it through, then serve with the chow mein noodles.
