Ingredients -
1 lb chicken breasts, boneless and skinless
½ cup BBQ sauce
2 cups pineapple chunks
3 tablespoons thawed orange juice concentrate
1 green bell pepper, chopped
1 red bell pepper, chopped
Preparation:
Preheat the grill to a medium high heat.
Cut the chicken into 1 inch chunks.
Thread the chicken alternately with the bell peppers and pineapple on to 8 long wooden skewers to make 4 kabobs.
Mix the juice with the BBQ sauce and brush this mixture over the kabobs.
Grill the kabobs for about 8 minutes or until the chicken is done, brushing them as they cook with the remaining sauce.
Discard any leftover sauce.
