A Wonderfully Sweet Grilled Chicken Recipe

There are so many recipes for chicken kabobs but this one uses pineapple and bell pepper along with the chicken for color and texture. Orange juice is added to the barbecue sauce to make the kebobs wonderfully sticky and sweet.

The only thing you need to be careful about when making chicken shish kabobs is to keep an eye on them. Chicken kabobs can burn quickly if you leave them for too long, so if they show signs of burning, turn the heat down or turn them over. The remaining sweet sauce is served with these chicken kabobs as a tasty dip.

Orange Barbecue Chicken Kabobs

Ingredients -

1 pound Boneless, Skinless Chicken Breasts, cut into 1-inch pieces
2 cups Pineapple Chunks
1 Red Bell Pepper, cut into chunks
1 Green Bell Pepper, cut into chunks
1/2 cup Barbecue Sauce
3 tablespoons Frozen Orange Juice Concentrate, thawed

Preparation:

Preheat grill to medium-high heat. Using eight long wooden skewers, (two, side-by-side, for each kabob) thread chicken alternately with pineapple and peppers onto skewers, to create four kabobs.

Mix barbecue sauce and juice; brush on kabobs, reserve some sauce for dipping after grilling.

Grill kabobs 8 to 10 min. Or until chicken is cooked through, brushing occasionally with remaining sauce.
