This is one of the easiest boneless chicken recipes around yet it tastes delicious. There is little point in buying ready seasoned chicken breasts, which contain unnecessary additives, when you can make your own so easily. This is not a traditional honey mustard chicken recipe because no honey is used in the recipe; instead mustard, Italian seasoning and garlic powder combine to give all the flavor you need. The chicken is simply mixed with the seasonings and grilled. Be careful with the chicken because you do not want to puncture it and let the juices flow out. If you do that it might become dry which will spoil all your hard work.
You can leave the chicken in the marinade for up to half an hour, to really infuse it with flavor before grilling it, if you want, else just dipping it into the sauce is enough to flavor it. Perhaps you are still surprised when you see a five ingredient recipe but, trust us, simple recipes are often the most successful of all. Not only are recipes with just a few ingredients easier to make because you do not have to juggle lots of different things, but keeping the ingredients simple means keeping the flavors streamlined. This mustard chicken recipe is good served with either boiled or mashed potatoes or rice and some fresh vegetables on the side. If you real need to have the honey with your mustard you can serve this dish with honey as a dipping sauce but sometimes it is not necessary, unless you especially love the sweet flavor it brings.
Ingredients -
1 lb boneless chicken breasts
2 tablespoons vegetable oil
½ teaspoon Italian seasoning
1 teaspoon garlic powder
4 tablespoons Dijon mustard
Preparation:
Preheat the grill to medium high and oil the grill rack.
Combine the oil, mustard, Italian seasoning and mustard in a Ziploc bag.
Add the chicken and shake well to coat.
Alternatively you can use a bowl.
Put the chicken on the grill rack and cook it for about 20 minutes or until it is done.
Make sure you don't puncture it because if you do, it will dry out.
When the juices run clear, the chicken is done. Discard any leftover marinade.
