An Easy Chicken Pasta Recipe - Pasta With Grilled Chicken

 
 
Chicken and pasta recipes are two things that go fantastically together, and this one is no exception. Combine grilled chicken with a simple homemade sauce and fresh herbs for an incredibly delicious meal that'll satisfy everyone. If you want to add a little more spice, a little red pepper and added oregano will do the trick.

Chicken pasta dishes are a classic way to use boneless chicken pieces to create a healthy, interesting meal. Grill chicken and make sauce in advance to put together your dish quickly on nights when you don't have a lot of time to cook. You can even freeze portions of this dish, minus the fresh herbs, to take for gourmet lunches.

 

Gourmet Grilled Chicken and Pasta

 
 
Ingredients -
 

Sauce

1/2 medium onion, chopped finely
1/2 red, orange or yellow bell pepper, sliced
4 cloves garlic, minced
1 tablespoon extra virgin olive oil
1 (15 oz) can of diced tomatoes
1 (15 oz) can of tomato sauce
1 (6 oz) can of tomato paste

Herbs and Spices

2 tablespoons fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1 tablespoon fresh oregano (optional)
1/2 teaspoon red pepper (optional)
Black pepper to taste

2 boneless chicken breasts, grilled and sliced
2 cups spaghetti or other pasta
Parmesan or Asiago cheese, grated, to taste

 
Preparation:
 

Preheat grill to a medium high heat.

Sauté onions in olive oil until they become translucent then add garlic and cook for an additional minute. Add tomatoes, tomato sauce and paste, peppers, herbs and spices.

Once sauce comes to a boil, reduce to a simmer until desired thickness is achieved. Warm chicken if needed.

Cook pasta until al dente, then serve topped with sauce, grilled chicken, and Parmesan or Asiago cheese.
