Ingredients -
Sauce
˝ medium onion, chopped finely
˝ red, orange or yellow bell pepper, sliced
4 cloves garlic, minced
1 tablespoon extra virgin olive oil
1 (15 oz) can of diced tomatoes
1 (15 oz) can of tomato sauce
1 (6 oz) can of tomato paste
Herbs and Spices
2 tablespoons fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1 tablespoon fresh oregano (optional)
˝ teaspoon red pepper (optional)
Black pepper to taste
2 boneless chicken breasts, grilled and sliced
2 cups spaghetti or other pasta
Parmesan or Asiago cheese, grated, to taste
Preparation:
Preheat grill to a medium high heat.
Sauté onions in olive oil until they become translucent then add garlic and cook for an additional minute. Add tomatoes, tomato sauce and paste, peppers, herbs and spices.
Once sauce comes to a boil, reduce to a simmer until desired thickness is achieved. Warm chicken if needed.
Cook pasta until al dente, then serve topped with sauce, grilled chicken, and Parmesan or Asiago cheese.
