Crispy Oven Fried Chicken Recipe

Ingredients -

4 chicken breast halves, boneless and skinless
½ cup whole wheat breadcrumbs
¼ cup wheat germ
2 beaten eggs
½ teaspoon sugar
1 teaspoon onion powder
1 teaspoon salt
¼ teaspoon ground red pepper
Cooking spray

Preparation:

Preheat the oven to 400 degrees F.

Combine the wheat germ, breadcrumbs, sugar, red pepper, onion powder and salt in a shallow bowl.

Put a cooking spray-coated wire rack on a baking sheet.

Coat the chicken in the beaten egg and then dredge it in the breadcrumb and wheat germ mixture, pressing it well so the crumbs stick.

Shake off any excess and put the chicken breasts on the wire rack.

Spray them with cooking spray and bake them for about 35 minutes or until done.

A meat thermometer inserted into the thickest part should read 180 degrees F when the chicken is done.
