Chicken Fried Rice with Egg

If you have leftover chicken, leftover rice and some vegetables, you can make this tasty Chinese chicken recipe. Even if you do not have leftovers, this one is well worth making from scratch because it is still quick. It is a good idea to taste as you go because soy sauce and oyster sauce are very salty, so you will not want to add too much. It is easier to add more saltiness that to tone down an over-salted egg fried rice recipe.

Egg Fried Rice with Chicken and Vegetables

Ingredients -

4 cups cold cooked rice
1 green onion, diced
1 medium onion, diced
Oyster sauce
Light soy sauce
2 eggs
¾ cup peas
1 carrot, peeled,julienned and chopped short
Oil for stir frying
Salt and freshly ground black pepper

Preparation:

Beat the eggs with a chopstick and add a little salt or oyster sauce.

Heat the wok and add some oil.

Pour half the egg mixture into the wok and cook it over a medium heat.

Turn it once during cooking.

Cook the rest of the egg the same way.

Cut the egg into thin strips and save it for later. Stir fry the onion over a high heat for a minute then remove it from the wok.

Do the same for the carrot.

Add more oil, turn the heat down to medium and stir fry the cold rice. Add the salt, pepper, soy sauce and oyster sauce.

Add the chicken, egg slices and vegetables and mix well.
