Ingredients -
1 lb boneless chicken breasts, in strips
2 tablespoons vegetable oil
8 flour tortillas
10 ¾ oz can cream of mushroom soup
1 green pepper, in strips
1 sliced onion
1 cup shredded Monterey Jack cheese
½ cup tomato salsa
Preparation:
Heat the vegetable oil in a skillet, then sauté the chicken strips until they are browned, stirring frequently.
Add the onion and bell pepper and cook for 4 minutes or until tender.
Add the salsa and mushroom soup and warm through.
Spoon half the chicken mixture into the middle of each tortilla and scatter the cheese over the top.
Add some extra salsa, then fold the tortilla around the filling and serve hot.
