Easy Chicken Taquitos Recipe

Taquitos make excellent snacks as well as a tasty part of a meal. With this simple recipe, you can make these delicious treats any time you want. Since they are baked instead of fried, they are healthier for you, too. They also make less of a mess than frying taquitos. Serve them up with guacamole, sour cream, or salsa if you like.

One of the best things about this recipe is that you can use leftover chicken or rotisserie chicken from the grocery store. These baked chicken taquitos are a great way to use up all those leftovers that would otherwise languish in the refrigerator. The filling also makes a great alternative to your normal taco filling.

Keep some filling on hand in the refrigerator and you can easily whip some up for after school snacks for the kids. They will love to munch on them and you can rest assured that they are getting a healthy snack to tide them over until dinner.

You can also serve this recipe for baked chicken taquitos as an appetizer at a party. Just stack them up on a platter and watch them disappear. Simple Crispy Chicken Taquitos

Ingredients -

1 tablespoon olive oil; have more on hand for brushing the tortillas
1 cup chopped onion
2 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon sea salt
¼ cup cilantro, chopped
2 cups cooked chicken meat, shredded
2 cups chicken broth (for corn tortillas, only)
12 flour or corn tortillas, 6 inches in diameter
1 cup queso fresco, crumbled (you can substitute shredded monterey jack or cheddar cheese)

Preparation:

Oil a baking sheet and preheat your oven to 425 degrees Fahrenheit.

Heat up the olive oil in a skillet over medium heat. Add the chopped onion and let it cook a few minutes until it begins to turn translucent. Add the garlic, cumin, salt, and paprika. Stir and cook a few minutes longer until it becomes fragrant. Remove from heat and stir in the chicken and cilantro. Set aside.

For Flour Tortillas:

Spread a tortilla on a flat work surface and spread 2 or 3 tablespoons of chicken mix on the bottom third of the tortilla. Top with some cheese and roll it up. Lay it seam side down on your oiled baking sheet. Repeat with remaining tortillas. Spray or brush oil lightly on the tortillas and bake in the oven until lightly brown and crisp, approximately 12 to 15 minutes. Serve immediately.

For Corn Tortillas:

Heat chicken broth to a light simmer in a saucepan large enough for tortillas. Dip each tortilla briefly for 1 to 2 seconds; just enough time to soften them. Lay the softened tortilla on a flat work surface and spread 2 or 3 tablespoons of chicken mix on the bottom third of the tortilla. Top with cheese and roll it up. Place the finished taquitos on the baking sheet with the seam facing down. Repeat with remaining tortillas. Spray or brush oil lightly over tortillas and bake in the oven until lightly brown and crisp; about 12 to 15 minutes. Serve immediately.
