The chicken remains moist and tender in the wrap, providing a wonderful contrast in flavor and texture to the other ingredients. Ingredients -
8 ounces skinless boneless chicken breast
1 cup sliced green bell pepper
1 cup sliced red bell pepper
⅓ cup sliced sweet onion
⅓ cup feta cheese, crumbled
½ cup cherry tomatoes, cut in halves
⅓ cup diced black olives
1 Tablespoon olive oil
1 ½ teaspoon dried basil
1 ½ teaspoon fresh garlic, minced
⅔ cup hummus
4 large flour tortillas
1 cup baby spinach leaves
Preparation:
Place a chicken breast between two sheets of waxed paper and pound it until it is approximately one-half inch thick. Repeat with the other chicken breasts until all are flattened.
Spray your pan with cooking oil and let the chicken sauté for about 8 minutes, or until done. Slice the chicken into thin strips and set aside.
Stir the two bell peppers, onion, feta cheese, olives, basil, and garlic together in a large bowl.
Spread hummus on each tortilla so the entire top surface is covered. Spread the vegetable mixture on top.
Sprinkle the cherry tomato halves and spinach leaves on top.
Add the chicken strips.
Roll the bottom portion of the tortilla up so it forms a container for the filling, and then roll from one side towards the other until your wrap is tightly rolled.
Repeat with other tortillas.
