Crispy Baked Chicken Taquitos

Baked Chicken Taquitos

Ingredients -

3 ounces cream cheese, softened
¼ cup salsa verde
1 Tablespoon fresh lime juice
½ teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon onion powder
¼ teaspoon granulated garlic
3 Tablespoons fresh cilantro, chopped
1 green onion, sliced
2 cups cooked chicken, shredded
1 cup pepper jack cheese, grated
10-12 small flour tortillas
Sea salt
Cooking spray

Preparation:

Preheat your oven to 425 degrees Fahrenheit. Line your baking sheet with foil and spray it lightly with cooking spray.

Warm your cream cheese in the microwave for 20 to 30 seconds until it is easy to stir. Mix your softened cream cheese, salsa verde, lime juice, cumin, chili powder, onion powder and granulated garlic in a medium-sized bowl. Add the cilantro, green onion, chicken, and cheese. Mix well.

Place 2 or 3 tablespoons of chicken filling on the lower third of each tortilla, keeping it half an inch away from the edges. Roll the tortilla tightly. Repeat with all the tortillas.

Place the tortillas seam side down on your baking sheet. Do not let them touch each other.

Spray the tops of your taquitos lightly with cooking spray and sprinkle them with a little sea salt.

Bake for 15 to 20 minutes or until crisp. The edges will begin to brown.

Serve hot with salsa, guacamole, or sour cream.
