Savory Bacon Wrapped Chicken Breast

What is better than a tender piece of chicken cooked to perfection? Chicken wrapped with bacon, of course! They complement each other like steak and lobster. Bake or grill it and you have got something extra special. Bacon wrapped grilled chicken is something that everyone will remember. Make it for a family get together or for a special intimate dinner; either way, you will hear rave reviews about your chicken.

This is a very simple recipe that you can put together in a matter of minutes. If you are really in a hurry, you can cook the bacon ahead of time and stuff the chicken breasts ahead of time. When you are ready to cook, just assemble and watch them turn golden brown.

Feel free to experiment with this recipe; you can change the filling, choose a different cooking method, or do whatever motivates you at the moment. This is a meal that will be appreciated by young and old alike. It may not be appropriate for special diets, however.

Serve it up with a nice fresh green salad or some grilled veggies from the barbecue. The smoky flavor would complement the bacon very nicely. Zucchini, onion, mushrooms, bell peppers, sweet potatoes, and anything else you may have in your garden would make a nice side dish. Alternatively, you could have the bacon wrapped chicken by itself as a lunch or snack.

Bacon Wrapped Chicken Surprise

Ingredients -

12 strips of bacon
4 chicken breast halves, boneless and skinless
2 packages (3 ounces each) cream cheese, softened
4 garlic cloves, minced
1 teaspoon salt
1 can (4 ounces) green chilies, chopped and drained

Preparation:

Cook bacon in a large skillet over medium heat until cooked but not crisp. Remove to a paper towel to drain. Wrap the chicken breasts in plastic wrap and pound to flatten to about ⅛ inch thickness.

Remove the plastic wrap. Spread the cream cheese over one side of the chicken breasts.

Sprinkle salt and minced garlic on top. Add a few chilies to each chicken breast. If you do not like chilies, try some chopped chives mixed in the cream cheese. Roll up from the longest side and tuck the ends in.

Wrap the bacon around each piece of chicken and secure them in place with toothpicks. Place them in a greased 1 quart baking dish or place them on the grill. Cook at 350 degrees Fahrenheit or until the chicken juices run clear and bacon crisps up.

This should take 10 to 15 minutes in either the oven or on the grill.

If cooking on the grill, metal skewers work best since bamboo tends to char.

If you want to use bamboo skewers, remember to soak them for at least an hour in water before using them.

Remove toothpicks and skewers before serving.
