Ingredients -
˝ head lettuce
1 bunch green onions, finely chopped
˝ red bell pepper, in thin strips
˝ green bell pepper, in thin strips
2 tablespoons sesame seeds
4 skinless, boneless chicken breasts cooked and shredded
˝ cup carrot, in thin strips
1 can chow mein noodles
For the Dressing
:
4 teaspoons sugar
2 teaspoons salt
˝ cup salad oil
2 tablespoons sesame oil
6 tablespoons vinegar
Preparation:
Warm the chow mein noodles gently and divide them between 4 plates.
Combine the lettuce, green onions, bell pepper strips, chicken and carrots and divide this mixture between the 4 plates.
Toast the sesame seeds in a dry pan over a medium heat for until they are fragrant.
Alternatively you can bake them on a dry baking sheet at 275 degrees F for 5 minutes.
Combine the dressing ingredients and pour this over the Chinese salad just before serving, then sprinkle the toasted sesame seeds over the top.
