These wraps are a great alternative to the traditional chicken salad sandwich, with whole-wheat tortillas and an abundance of fresh, colorful vegetables. Combining tomatoes, yellow and red bell peppers, spinach and crisp carrot sticks with the classic taste of chicken salad, a chicken salad wrap is an excellent way to liven up your lunch. It is quick to assemble and travels well without being unhealthy, making it a good option to take to work with you or on a picnic. Obviously, you will need to keep these whole-wheat chicken salad wraps cool because they do contain mayonnaise, which should not be allowed to get warm.
The mayonnaise and yogurt mixture is lower in fat than simply using mayonnaise and the slight sourness of the yogurt goes beautifully with the vegetables and chicken in this healthy chicken salad wrap. Wraps featuring chicken salad tend to be heavy on the mayonnaise or creamy dressings so it is refreshing to see a healthier alternative like this chicken in whole wheat wraps recipe.
The chicken salad recipe below is just a starting point, of course. Mix a little ginger, rice vinegar and soy sauce into the dressing to create an Asian chicken salad wrap recipe, or include basil and oregano for an Italian flavor. You can end up with an enormous number of variations, just by using a little creativity. You can either use leftover cooked chicken breast to make these, in which case they will be ultra-fast to assemble, or cook some chicken to make them. If you are cooking the chicken, you can let it cool or use it warm; both methods are really good here.
