Ingredients -
1 chicken breast fillet
3 ½ tablespoons Caesar salad dressing
1 baby cos lettuce, leaves separated
12 inch baguette, diagonally cut into 1/3 inch thick slices
2 oz bacon rashers, no rind, cut into thin strips
1 egg
½ onion, thinly sliced
Shaved parmesan to garnish
Preparation:
Heat a skillet over a medium high heat and sauté the chicken for 4 or 5 minutes per side until it is cooked through.
Put it on a plate and cover with foil to keep it warm.
Set it aside for 5 minutes to rest then slice it thinly across the grain.
Boil the egg for 7 minutes then peel it and slice it thinly.
Heat the skillet over a high heat, add the bacon and cook it until crisp, stirring often.
Preheat the broiler to a high heat and cook the baguette slices until they are golden on both sides.
Arrange the lettuce, egg, onion, chicken, croutons and bacon over the lettuce.
Drizzle with the Caesar salad dressing and sprinkle with the shaved parmesan.
