1 pound boneless chicken breasts, cut into strips
½ cup of your favorite barbecue sauce
1 ten ounce bag of mixed salad greens
1 tomato, cut into wedges
½ cup thinly sliced onion
½ cup ranch dressing
¼ blue cheese crumbles
Preparation:
Heat chicken in a non-stick skillet on medium high heat until cooked through, stirring frequently. Add barbecue sauce near the end.
If the barbecue chicken seems dry at the end, add more sauce to moisten it. Allow chicken to rest until warm, not hot.
Toss greens and other vegetables in a large bowl and top them with the chicken.
Toss salad lightly with ranch dressing, then sprinkle with cheese. Serve immediately for the best result.
