Ingredients -
8 boneless chicken breast halves
8-10 lemon slices
1 cup fresh basil leaves
½ cup fresh mint leaves
½ cup pistachio kernels
3 cloves garlic
½ cup grated parmesan or other hard Italian cheese
½ cup extra virgin olive oil
Preparation:
Combine herbs, garlic, nuts, ½ cup of cheese and oil in a food processor or blender. Pulse to form a paste, stirring frequently.
Preheat oven to 350 degrees F.
Line a baking sheet with foil.
Cut a slit in each chicken breast, inserting herb paste and one lemon slice into each.
Place on baking sheet and sprinkle with cheese. Bake for 30 minutes, or until chicken is no longer pink and juices run clear. Serve hot or cold.
