4 boneless, skinless chicken breasts
¼ teaspoon salt
¼ teaspoon ground black pepper

1 tablespoon olive oil
Preparation:
Combine the salt, pepper, and garlic powder.
Cut the chicken breasts in half down the center. Wash and pat dry. Pound the breasts slightly to decrease the thickness and tenderize.
Add the olive oil to large skillet and heat over medium heat. Add the chicken breasts and cook for 7 minutes.

Ingredients -
4 teaspoons extra-virgin olive oil
1 teaspoon cornstarch
2 teaspoons lemon juice
2 teaspoons fresh thyme or ¼ teaspoon dried thyme leaves
4 teaspoons butter
Salt
Fresh parsley, chopped
1 tablespoon lemon rind, grated
2 green onions, chopped fine
Preparation:
In the skillet used for the chicken breasts, retain the medium heat. Add the butter and olive oil. Put in the green onions and cook 10 minutes. Stir to avoid browning.
Combine the lemon juice and cornstarch in a cup or small bowl and stir to mix the cornstarch.
Put the juice-cornstarch mix, lemon rind, and thyme in the skillet. Add a dash of salt for flavoring.
Continue to cook over medium heat, stirring until mixture thickens.
Place the chicken in the skillet and turn to coat with sauce. Turn to low and cook for 1 minute to reheat the chicken.
