Ingredients -
½ lb boneless, skinless chicken breast, in strips
2 teaspoons olive oil
4 thin slices red onion
¼ cup julienned sweet red pepper
2 lettuce leaves
¼ cup mango salsa or chutney
2 flour tortillas, 8 inches
¼ cup cream cheese, softened
¾ teaspoon Caribbean jerk seasoning
Preparation:
Sprinkle the chicken with ½ a teaspoon of jerk seasoning and cook it in a non-stick pan over a medium heat for 5 to 6 minutes or until the juices are clear.
Combine the cream cheese with the rest of the jerk seasoning and spread this over the tortillas.
Spread chutney or salsa whichever you prefer over the top.
Layer with lettuce, chicken, onion and sweet pepper.
Roll up tightly and serve.
