Creamy Chicken with Broccoli on Pasta

Everyone will love this delicious dish full of broccoli, chicken, and bacon. The creamy sauce goes well over pasta or rice, making this very close to a one pot recipe. Throw this together on a busy night and watch everyone eat it up. This recipe is a nice change from pasta with a tomato sauce. The creamy texture is tasty and full of delicious surprises. You can even have dinner on the table in 30 minutes or less. That is a definite plus when you have hungry kids.

You can make this in the summer and use fresh broccoli instead of frozen. It will cook just as easily and taste terrific. You could also add mushrooms or whatever else you want just for variety. Leftover chicken would work well in this recipe, and cut down on cooking time. Start your pasta or rice when you begin the rest of the recipe and they should be done about the same time. You can skip the Swiss cheese if you wish. When you add it, the dish is reminiscent of chicken cordon bleu, yet much easier to make.

Serve with a nice slice or two of crusty bread to help sop up the sauce. You could also make a small salad, but it is not necessary since this recipe includes vegetables. Save the leftovers for lunch the next day, if there are any. Leftovers may be the least of your worries with this recipe, however. You may end up having to make a double batch the next time in order to keep everyone happy.

Creamy Chicken with Broccoli

Ingredients -

1 pound chicken breasts, boneless, skinless, cut into cubes
1 small onion, chopped
2 Tablespoons butter
1 can (10.75 ounces) cream of mushroom soup, undiluted
⅔ cup mayonnaise
˝ cup sour cream
2 Tablespoons white wine or chicken broth
⅛ teaspoon garlic powder
Salt
Pepper
1 cup cooked ham, cubed
6 cups broccoli florets, thawed
3 bacon strips, cooked and crumbled
Hot cooked pasta or rice
1 cup Swiss cheese, shredded (optional)

Preparation:

Sauté chicken and onion in a large skillet with butter until the meat is cooked through.

Combine the soup, mayonnaise, garlic powder, sour cream, wine or broth, salt and pepper in a large bowl. Add to the chicken mixture.

Stir in the ham, broccoli, and crumbled bacon. Cover and let it cook until heated through.

Serve on top of pasta or rice. Sprinkle with Swiss cheese if desired.
