Garbanzo Bean Chicken Chili Recipe

Ingredients -

1 pound cubed boneless skinless chicken breasts
1 cup chopped onions
½ cup chopped carrots
½ cup chopped celery
2 minced garlic cloves
1 cup salsa
1 large can tomatoes and juice
1 cans tomato sauce
½ teaspoon cumin
2 teaspoons chili powder
1 large can drained garbanzo beans
1 chopped green bell pepper

Preparation:

Prepare a large heavy skillet by lightly coating it with cooking spray. Place the skillet over a medium heat setting until it is hot.

Add the cubed boneless skinless chicken breasts, chopped onions, chopped carrots, chopped celery, and minced garlic cloves. Stir to combine while cooking until the meat until it is no longer pinkish in color.

Cut or shred the tomatoes in the can while using a knife and fork or two forks. Gradually stir in the salsa, tomatoes and juice, tomato sauce, cumin and chili powder. Bring to a boil and then reduce the heat to low. Cover with lid and allow the dish to simmer for about 30 minutes. Stir occasionally to blend the flavors as well as prevent scorching.

Drain the garbanzo beans. Stir in the garbanzo beans and chopped green bell peppers. Simmer for about 15 minutes or until thoroughly heated. Remove from heat and allow the dish to set for about 10 to 15 minutes before serving.
