Chicken and Dumplings Recipe

Chicken and Dumpling Soup

Ingredients -

1 pound of chicken breast, skinned and boneless
2 small carrots
⅓ pound of string beans
1 can of peas
1 onion
3 cloves of garlic
1 quart of chicken broth
Salt and pepper, to taste
1 cup of white flour
1 teaspoon of baking powder
1 tablespoon of melted butter
½ cup of milk
Fresh herbs of your choosing

Preparation:

To begin, set the chicken broth in a pot to boil. Dice the garlic and onions, and add them into the broth.

Chop the chicken into cubes, and add them into the chicken broth. Add the chopped carrots, string beans, and peas.

To make the dumplings, mix the flour, herbs, salt, pepper, and baking powder together. Fold in the melted butter, and mix in the milk until you get balls of dough.

Wait until the soup is boiling, and drop balls of dumpling dough into the soup.

Let the soup cook for 30 minutes more, adding a drop of sesame seed oil, and a few dashes of soy sauce and fish sauce for Oriental flavor.

Serve with saltine crackers
