Ingredients -
6 chicken breast halves, boneless and skinless
2 tablespoons frozen orange juice concentrate
1 minced clove garlic
1 tablespoon butter
⅛ teaspoon crushed red pepper flakes
1 teaspoon orange zest
¼ cup honey
½ teaspoon vegetable oil
½ teaspoon salt
Chopped fresh parsley, to garnish
Chopped green onion, to garnish
Preparation:
Mix together the juice concentrate, honey, garlic, red pepper, salt, orange zest and garlic.
Rinse the chicken under cold running water, and then pat it dry.
Season it with salt.
Heat the butter over a medium high heat in a nonstick frying pan and cook the chicken for 4 minutes per side, until it is seared and just cooked through.
Pour the orange mixture over the chicken and keep cooking it, turning the chicken over as the sauce gets thicker.
Serve the chicken and sauce immediately, sprinkled with the green onion and parsley.
