Ingredients -
4 skinless, boneless chicken breasts
2 cups chicken broth
¼ teaspoon garlic powder
16 oz pack medium egg noodles
1 cup carrot, in thin strips
½ cup shiitake mushrooms
½ inch ginger root, peeled and very finely chopped
½ cup green onion, sliced
½ teaspoon dried basil
⅛ teaspoon ground black pepper
Preparation:
Sauté the chicken breasts over a medium high for 10 minutes or until browned.
Add some of the broth if the chicken sticks to the skillet.
Remove the chicken and cut it into 1 inch cubes.
Sprinkle with garlic powder. Heat the broth, basil, pepper, ginger and vegetables in the same skillet and bring to a boil.
Stir in the noodles and return the chicken to the skillet.
Turn the heat down to low, cover and simmer, stirring now and then.
Cook for 10 minutes or until the chicken is cooked through and the noodles are soft.
