Ingredients -
2 small boneless chicken breasts, cut into pieces
To Serve:
8 flour tortillas
⅛ teaspoon mild chili powder
⅛ teaspoon paprika
1 tablespoon and 1 teaspoon olive oil
½ small red pepper, de-seeded and thinly sliced
1 clove crushed garlic
⅛ teaspoon cumin (optional)
1 peeled, thinly sliced onion
¼ teaspoon oregano
3 oz grated cheddar
3 oz shredded iceberg lettuce
3 tablespoons sour cream
Preparation:
Toss the chicken in the chili powder, oregano, paprika, and cumin. Heat a teaspoon of the oil in a pan and sauté the chicken for 3 or 4 minutes, stirring occasionally. Remove it with a slotted spoon.
Add the rest of the oil and sauté the garlic, red pepper, and onion for 5 minutes.
Return the chicken to the pan, season it, and heat it through.
Heat the tortillas in the microwave.
Place some of the chicken mixture in the center of each tortilla, top with some salsa, lettuce, cheese, and sour cream. Roll up and serve hot.
