Ingredients -

2 chicken breast fillets, skinless
3 ½ ounces polenta grains
1 medium egg, beaten
½ teaspoon seasonings or herbs
ground black pepper (optional)

Preparation:

Preheat oven to 400 degrees Fahrenheit.

Wipe a light layer of oil on a baking sheet large enough to hold your chicken nuggets in a single layer.

Cut the chicken breasts into small nuggets; 2 inches square is a good size. If you prefer strips, you can cut the chicken into 1 inch wide strips. Different shapes will require slightly different cooking times, so you may want to prepare a separate sheet for different shapes.

Beat the egg in a bowl. Drop the chicken pieces in the egg. Make sure they are coated well.

Mix the polenta grains with your seasonings of choice. Put the mixture on a plate or in a plastic bag. Dredge the egg-covered chicken in polenta grains. Each nugget should be well-coated with the polenta mixture. Remove the chicken and place it on the baking sheet. Repeat with other nuggets or strips.

Place the chicken in the oven. Cook for 20 to 25 minutes. Adjust cooking times as needed for different shapes of chicken. Poke chicken with a skewer to see if juices are running clear. The outside of each piece should be golden and crisp.

Serve hot or cold.
