Ingredients -
6 boneless chicken breast halves
½ cup fine, dry breadcrumbs
2 tablespoons chopped, fresh parsley
⅔ cup parmesan ⅓ cup reserved
3 plum tomatoes chopped fine
¼ teaspoon black pepper
¼ teaspoon garlic salt
¼ cup Italian salad dressing
Preparation:
Preheat the oven to 350 degrees F.
Combine the breadcrumbs, cheese, parsley, garlic salt and pepper in a bowl.
Dip the chicken in the salad dressing and then in the breadcrumb mixture.
Place the chicken on a foil-lined cookie sheet and top with the remainder of the cheese and the fresh tomatoes.
Bake uncovered for 45 minutes or until tender.
Serve hot with your favorite salad and fresh breadsticks
