Ingredients -
½ cup onion, bell pepper and celery, diced
1 teaspoon olive oil
2 pounds ground chicken
½ cup fine breadcrumbs
⅓ cup light mayonnaise
2 large eggs, lightly beaten
2 Tablespoons flat leaf parsley, chopped
2 teaspoons Greek seasoning
½ teaspoon lemon zest
¼ teaspoon salt
Preparation:
Preheat your oven to 350 degrees Fahrenheit.
Sauté the peppers, onions and celery in oil in a small skillet over medium-high heat until they are just tender.
Mix the chicken, breadcrumbs, mayonnaise, eggs, parsley, seasoning, lemon zest, and salt. Add the cooked vegetables and mix until combined.
Divide the mixture into as many portions as you need to feed at dinner. Shape each portion into a small loaf and set on a sheet pan. Bake the meat loaves for 40 to 45 minutes, or until the internal temperature is 165 to 170. Let them rest at least 5 minutes before serving. If you want that browning shown in the photo, you can pan fry the loaves before baking or serving to create that golden brown surface.
