Chicken is quite a popular choice for meals these days especially since many people are taking a closer look at things such as calories, fat grams, amount of protein and more. Beef is still popular as well but is eaten sparingly since it is generally less healthy for people to consume. Luckily we have a delicious alternative in chicken which is low in both calories and fat and quite high in protein.
Eating a healthier diet does not have to mean your meals with be boring with no zest to them. With chicken you can make it quite full of flavor just by adding some of your favorite spices and perhaps even some light butter. The recipe I am about to share with you is not as healthy as some others, yet it still comes filled with plenty of much-needed protein and vitamins and minerals.
This recipe is pretty healthy overall since you will be getting some vegetables and protein in the chicken and in the cheese. One might think a stuffed chicken recipe will be difficult to make but that is not so. I found an easy one!
Ingredients -
One bag of frozen broccoli
One medium chopped onion
Two chopped garlic cloves
One half teaspoon of the following: garlic powder, pepper, and salt
One half cup of grated Parmesan or Provolone cheese
Two tablespoonfuls of butter (or light butter)
One to two teaspoonfuls of olive oil
Eight boneless, skinless chicken breasts
One bag of pita bread
One package of bacon
Preparation:
Preheat oven to 350F.
Cook up the broccoli, butter, olive oil, and onions until tender.
Coarsely squash and add in the cheese.
Keep stirring the mixture until the cheese is melted.
Place some broccoli on the chicken breasts and roll them, securing with good toothpicks so they will stay in place.
Bake in the oven at 350F for 16 to 18 minutes. Cut into the middle of the chicken breasts to ensure there is no pink showing.
Place each thoroughly cooked piece of chicken in a warm pita (warm it in the oven or microwave) and do not forget the broccoli.
If you like bacon you can wrap a cooked piece of bacon around each one but do not overcook the bacon or it will be very difficult to wrap.

You can wrap some of the chicken breasts in bacon and some without, depending on who likes bacon. One nice thing about this recipe is that it is not too complicated as many recipes are. This may just end up being one of your favorite ways to make chicken. In the photo it looks like French fries are on the plate which is not the best or healthiest choice unless eaten just on rare occasions. A salad would be a far better choice for a side dish.
